Production criteria:
. Several hand selections of over-ripe grapes in late October;
. Slow fermentation on wild yeast (for several months) with regular stirring;
. Alcoholic fermentation stopped when 85 g/l of residual sugar is left, using a cross- flow filter (which limits the amount of sulfites needed).
Tasting notes:
Straw yellow color with gold nuances;
Complex and intense aroma of white and exotic fruit (apricot, peach, mango) with almond paste notes in addition to mild tobacco and mineral characters;
Full-bodied, generous sweet mouth. The oral flavors are supported by peach jam and honey tastes. A delightful vivacity invigorates the back palate.
This wine is usually served:
As an aperitif;
Matched with numerous desserts;
Trying it with blue cheese is an original association ;
